Lindsey’s Recipe for Grape Leaves

Ingredients

1 cup raw jasmine rice, cooked per package directions

1 cup raw black beluga lentils, soak for 3 hours, then cook per package directions

3/4 tsp. salt

1 tsp. black pepper

1, 15-ounce bottle of grape leaves

Optional: a crumbled 4-ounce block of feta cheese

For the dressing: 

1 garlic clove, crushed

1/2 cup lemon juice

1 tbsp. red wine vinegar

1 cup olive oil

½ tsp. black pepper 

½ tsp. salt  

2 tbsp. chopped fresh oregano (or about 1 tsp. dried)

Instructions

Drain lentils and add rice in a mixing bowl while still hot. Add ¾ tsp. salt and 1 tsp. black pepper and mix well. 

Make the dressing by whisking or shaking together all ingredients. Add 1 cup of the dressing to the rice and lentils and mix. Taste for saltiness, but keep in mind the grape leaves may be quite salty, so the interior should be less salty than if it were standing alone (and less salty if adding feta cheese). Refrigerate the filling for a few hours to harden the olive oil to make filling the grape leaves easier. When you take it out to stuff the grape leaves, if adding feta cheese, do so at this point. 

Stuff the grape leaves by putting a spoonful of the filling in the middle. Roll the stem side up, then the sides in, then continue rolling towards the point. Store in the refrigerator and eat for the next 1-2 weeks (the fresh oregano is anti-microbial and the oil and salt also protect from spoilage, so I tend to keep these longer than I would most leftovers). 

Note: Some people find the texture of an uncooked grape leaf too chewy, while I love it. If you think this may be you, cook your rice with less water then follow another grape leaf recipe for how to cook them, so that when cooked, the rice isn’t mushy. 

You’ll have leftover dressing, which is delicious with bean salads.
